Responsibility

The Senior Catering Manager will work in conjunction with the Director of Sales to achieve the hotel’s revenue and market share goals. Responsible for maximizing F&B and room rental revenue for corporate banquets, working closely with group sales to convert business. Strategically sell and book catering events through establishing new accounts and nurturing existing ones. Meet and exceed Catering and Banquet booking goals for food, beverage, rental and AV. Responsible for prospecting and taking inquiries with prompt handling (within the business day) of all leads, walk- ins and regular scheduled appointments. Target local catering from prospective clients identified in reader board surveys and online platforms. Liason with F/B Team and Culinary/Kitchen staff to ensure up to the minute communication. Make outside sales calls, and utilize proactive techniques such as cold calling, site inspections, and client entertainment to secure business. Evaluate a potential piece of business for profitability and overall benefit to the Hotel, ensuring the hotel remains in a competitive position. Have acquired knowledge with the ability to upsell clients, while promoting a level of service parallel to the luxury stature of the facility. Complete coordination of the Sales group functions acting as Convention Services CS liaison. Accurate and timely preparation of detailed Resumes and clients billing. Review function contracts prior to distribution to client and hotel staff. Follows up on the progress of groups booked, such as room night pick up, rooming lists, cut off dates, etc. with the Group Reservations Coordinator to ensure maximum revenues. Generate “thank you” notes to clients after functions with prompt follow up of negative client feedback as necessary. Follow up on bookings and solicit repeat business. Represent hotel in community affairs and industry related events. Work closely with Catering Coordinator on the daily flow of work processes – BEO preparation, inquiry follow up, maintain a thorough and detailed spreadsheet of all incoming business opportunities as well as detailed information on the definite and actualized business information sheet. Continue to develop and enhance Food & Beverage presentation. Train and mentor Catering team members
