Responsibility
Working closely with the Executive Chef and Sous Chef to execute services, initiatives, projects, events, and all service and strategic plans for Madison College Dining Services. Reporting to the Executive Chef, the Catering Lead will oversee all catering operations, and work closely with the Part Time Catering Assistant to ensure proper set up, delivery and clean up of catering events within the college. This position is responsible for managing resources, informed decision making, building customer relationships, and providing data to department leadership regarding daily operations. The full-time Catering Lead will have a standard schedule of Monday to Friday, 8:00am to 4:00pm, with flexibility required to accommodate business demands as needed. Perform set up for catering events using BEOs, following precise lists, ensuring that all set ups for catering events are filled. Performs general and technical routine cold food preparation/production duties for Catering events. Adjust daily work schedule to meet needs of operation due to scheduled and unscheduled absences and slower catering events. Delivers catering events in a timely fashion, ensures that all catering events are set up according to guidelines set by Dining Services. Ensure public and multi-functional workstations are clean and sanitized in adherence to Dane County Public Health Department regulations. Develop junior FT, PT, and student staff per kitchen leadership assignment. Communication to junior staff of Food Services standards of food quality, customer service and time management. Provide continual training or retraining of junior staff as required. Clean up of all catering events in timely fashion, making sure all rooms hosting catering events are left in a clean and orderly fashion. Check and maintain online catering website to ensure proper flow of business. Work with PT Catering Assistant to direct catering events in an efficient manner (timeliness, proper set up, communicate with hosts (when available), prompt clean up of events, follow up with catering website concerning any changes / updates ).
